    Other ingredients you will need

    • Pastry dough – You will need either 2 puff pastry sheets of store-bought pastry, or you can make Rough puff pastry from scratch at home.
    • Unsalted butter 
    • White sugar  - Or you can use light brown sugar instead.
    • Ground cinnamon
    • Vanilla extract

    Cooking tips

    Don’t overcook your apple filling. Cook the apple filling until it's just tender enough, keeping in mind it'll spend an extra 20 minutes in the oven.

    Allow the filling to cool down before using it. Before assembling your turnovers, make sure the apple filling has cooled down. This prevents excess moisture and maintains the integrity of your pastry.

    Secure the edges well. A properly sealed turnover not only holds all the goodness inside but also ensures a beautiful appearance. Use a fork or your preferred method to ensure no filling escapes during baking.

    Step by step directions

    Prepare the apple filling

    1. In a skillet, melt the butter over medium heat. Add the sugar, salt, vanilla extract, and ground cinnamon. Mix well.
    2. Add the diced apples to the skillet and mix. Cook for about 10 minutes, stirring occasionally until the apples are soft and the sauce has caramelized.
    3. Remove the skillet from the heat and allow the apple mixture to cool down completely. 
    4. Preheat your oven to 200°C (395°F) and line a baking sheet with parchment paper.

    Assemble the turnovers

    1. On a lightly floured surface, cut each puff pastry sheet into four even squares. 
    2. Place about 2 tablespoons of the filling in the center of each square.
    3. Beat the small egg and 1 tablespoon of water together to create an egg wash. Brush the edges of each pastry square with the egg wash.
    4. Fold each square diagonally to create a triangle, enclosing the apple filling. Use a fork to crimp and seal the edges securely.
    5. Brush the tops of the turnovers with the remaining egg wash, and make a couple of small slits on the tops.
    6. Place the turnovers on the prepared baking sheet and bake in the preheated oven for 20-23 minutes, or until the turnovers are puffy and golden.

    Ingredients

    • 2 sheets of store-bought puff pastry or make 1 batch of my Rough puff pastry instead
    • 500 g firm apples peeled, cored, and diced into ¼” cubes
    • 2 tablespoon unsalted butter
    • 80 g white sugar
    • 1 teaspoon vanilla extract
    • 1 teaspoon salt
    • 1 teaspoon ground cinnamon

    Egg wash

    • 1 small egg
    • 1 tablespoon water

    Instructions

    • In a skillet, melt the butter over medium heat. Add the sugar, salt, vanilla extract, and ground cinnamon. Mix well.

    • Fold each square diagonally to create a triangle, enclosing the apple filling. Use a fork to crimp and seal the edges securely.

    • Optionally, you can sprinkle some sugar over the turnovers before baking. Place the turnovers on the prepared baking sheet.
    • Bake in the preheated oven for 20-23 minutes, or until the turnovers are puffy and golden.
    • Once baked, remove them from the oven and allow them to cool down slightly until they are warm to the touch.
